CARAMELISED FENNEL, ONION + TOMATO FARINATA
Farinata is a delicious Italian flatbread made from chickpea flour. It's baked in a hot pan with olive oil until its bottom and edged are nice and crispy. High in protein, it's an easy grab and go option for any time of day; I particularly love it for lunch alongside a big salad.
I make this farinata batter using chickpea flour, water, lots of fresh herbs, lemon juice and zest, capers, caramelised onions and garlic and roasted fennel and cherry tomatoes.
I recommend heating in a pre-heated oven at 180ºC for 5-8 minutes, or in a hot frying pan until warm and crisp. This farinata will keep when sealed in a container for up to 5 days.
Two pieces per serve.
