This warming curry is the ultimate comfort food. Filled with flavour and spice, it's all you'll want to eat on a cosy night in. A blend of fresh tomatoes and coconut milk create the base for this curry and its technicolour of spices; we're talkin' cumin, coriander, fennel, cardamom, turmeric, cinnamon, clove, etc, etc, etc.
Did you know that spices pack a serious antioxidant punch? Adding spices to your food (or ordering food that contains them) increases its anti-inflammatory protection against oxidant damage! Eat up! Chickpeas are wonderfully high in fibre and plant-based protein too, which will nicely satiate you for any activity.
Rest assured, we ALWAYS soak our legumes before cooking - this greatly reduces their gas-producing qualities and improves digestibility too.
