ZESTY ZUCCHINI, WHITE BEAN + HERB GRATIN TART

Christmas celebrations are synonymous with slow cooked and barbequed meats. This delicious tart could instead be the delicious, vegetable-filled centre piece on your Christmas table. Even if you eat and enjoy meat, this tart is so flavoursome, delicious and festive. 

Featuring our home made pastry, layers of sauteed leeks and zucchini, creamy white beans blended into a sauce with fragrant herbs and lemon zest and topped with a crunchy sunflower and herb gratin. Totally vegan, totally delicious. 

Serves 6-8 slices.

Pastry: Buckwheat flour, chickpea flour, water, olive oil, lemon zest + salt. 

Filling: Zucchini, white beans, leeks, parsley, basil, chives, sunflower seeds, lemon juice, garlic, lemon zest, nutritional yeast, salt and pepper.
