A deliciously creamy salad filled with some seasonal gems right now; cucumber, radish, roasted kipfler potatoes, beluga lentils, fresh dill, parsley and avocado! This is the salad that wins over salad-haters, fills you up, and makes you excited for lunch!
Potatoes are filled with misconceptions; that they are just carbohydrates, that they contain no nutrients, that they're too starchy, and that they're empty calories. To help bust these myths, here are a few benefits to potato eating:
- They're a great source of vitamin B6; crucial for bodily enzyme reactions, nervous system function, supporting healthy iron levels, and hormone function
- High in potassium; an electrolyte which maintains fluid levels inside and around our cells, and acts as a co-factor for many enzymes, especially those involved in carbohydrate metabolism
- Yes they contain starch, but this starch is good especially when potatoes are cooked and cooled, as this creates resistant starch. This acts as a source of prebiotic fuel, feeding good bacteria in the body!

This dish is designed to be enjoyed within 4 days if kept refrigerated. We recommend eating at room temperature.
