A pie filed with greens + herbs is our definition of the perfect meal! It's like eating salad encased in a creamy filling and delicious chickpea flour pastry. I make this pie for my family at least twice each month; it's so handy to have on hand for any meal of the day. As a Mum to two young kids, having something like this available in my fridge is the difference between me eating dinner, or not. Pre-prepared options are essential!
This pie is filled with sautéed leeks, fennel, silverbeet, parsley and dill. Reminiscent of spanakopita, we make it creamy and cheesy with tofu and nutritional yeast. Our pastry is made from chickpea and buckwheat flours, lemon, water and olive oil; that's it!
We never thought we'd be able to put 'pie' and 'healthy' in the same sentence, yet here we are; this pie is a paradox.
Serves 6-8 slices.
Pastry: Buckwheat flour, chickpea flour, water, olive oil, lemon zest + salt.
Filling: Kale/silverbeet, tofu, leek, fennel, onion, parsley, dill, mint, lemon juice, olive oil, nutritional yeast, lemon zest, salt + pepper.
