 A pie filed with greens + herbs is our definition of the perfect meal! It's like eating salad encased in a creamy filling and delicious chickpea flour pastry. The perfect addition to your Christmas table, as it really shines as a vegetarian option.

This pie is filled with sautéed leeks, fennel, silverbeet, parsley and dill. Reminiscent of spanakopita, we make it creamy and cheesy with tofu and nutritional yeast. Our pastry is made from chickpea and buckwheat flours, lemon, water and olive oil; that's it!

We never thought we'd be able to put 'pie' and 'healthy' in the same sentence, yet here we are; this pie is a paradox. 

Serves 8 slices.

Pastry: Buckwheat flour, chickpea flour, water, olive oil, lemon zest + salt. 

Filling: Kale/silverbeet, tofu, leek, fennel, onion, parsley, dill, mint, lemon juice, olive oil, nutritional yeast, lemon zest, salt + pepper.
