ZESTY ROASTED ZUCCHINI, BUTTER BEAN + HERB SALAD WITH CRISPY CAPERS

A festive salad that celebrates summer produce and is perfectly fit to share for Christmas lunch or dinner! This salad is a lovely addition to the usual Christmas fare; ham, prawns, roasted meats, offering a fresh and zesty option to cut through the heaviness. If you, or somebody else at your Christmas table is vegan or vegetarian, this is a lovely, balanced and hearty salad to share.

Roasted zucchini, al dente butter beans, sautéed kale, fresh parsley and mint, lemon zest and juice, toasted pumpkin seeds and crispy fried capers; YUM.   

Served in 2x 1L boxes with fried capers and toasted pumpkin seeds served separately to help maintain their crunch. 

To assemble, simply empty the contents of your salad boxes onto your favourite platter or salad bowl and tip with crispy fried capers and pumpkin seeds. 

Serves 8-10 pax.
